This super simple raw slice is my lazy way of making a healthy treat that I don’t have to roll into balls. I usually make this at the end of a week and store in the freezer for morning or afternoon tea throughout the coming days.

I use Ark ‘tailored’ espresso beans and if you have a powerful food processor, you simply throw the beans in whole. It’s all about saving some time and creating simple food that tastes great, without the complicated steps and ingredients. You can use any of your favourite coffee beans and if they’re already ground, no problem.

Bulk food mixed raw nuts were on special the other day so I filled the jars up. You can use any nuts you like, but a mixture of almonds, cashew, walnuts and brazil would be my top pick. You’re welcome to be a little bit fancy and add psyllium husk, more coconut and goji to the mixture, but I’ve kept mine really basic for convenience and ease.

[ Recipe makes 12 slices ]

4 cups mixed nuts
2 cups dates
2 heaped tbl raw cacao powder
2 heaped tbl whole/ground coffee beans
2 heaped tbl desiccated coconut
Optional 2 tbl maca powder

Soak the nuts and dates in water for at least 4 hours or simply soak overnight. If you have gut issues then add a capful of ACV to the water. Rinse and drain well and then add to a food processor with the cacao, coffee, coconut and optional maca.

Blend well and then press into a lined baking tin. I used a square 20cm x 20cm. Shake some desiccated coconut on top, and then freeze to set for 30 minutes.

Slice into shapes you want, and then leave in an airtight container in freezer. Pull out 5 minutes before eating to allow them to soften.
